I've been pulling the breasts out, chopping them into big chunks, sauteing them lightly, then slicing, but this takes a lot of time and chopping frozen chicken is a major pain. I broke my good knife the other day doing this.

I think the way you've been doing it will lend the most flavor adn tenderness… but yes, you can "simmer" (don't boil!) them in their bags.
depends if the plastic packages were meant to be "boiled". i'd say read the directions…
